This programme at RIHM exposes students to a variety of techniques and influences that can help them broaden their baking horizons and start a successful career in the food service industry.
Baking and pastry arts programs at Shri Ram institute in Dehradun combine hands-on training with the business skills necessary to work in a bakery or restaurant. Accounting, communication, menu and shop management, and entrepreneurship courses prepare students for running their own businesses or working with an established business. Classes in pastry arts skills, food-related courses such as nutrition, wine and cheese discovery, and baking and ingredient theory give students a better understanding of their craft and their industry.
In terms of practical training, students learn skills such as cake decorating, pastry production, bread and dessert making, and other industry techniques. They also learn about the types of equipment in restaurants, hotels, bakeries, and pastry shops and will have plenty of opportunities to try them out. A work placement is also a part of the curriculum in some baking and pastry arts programs.

The coursework at SRIHM includes overviews of special occasions and wedding cakes. Students are introduced to a variety of decorating methods using royal icing, marzipan, gum paste and fondant, using air brushing, piping and more. The principles and techniques needed to create tiered cakes are covered in both classroom study and hands-on kitchen learning.
The combination of classroom and kitchen lab learning in this bakery course gives students an overview of standard kitchen practices, culinary vocabulary, and baking techniques. Students are introduced to both everyday and specialized kitchen tools and equipment, commonly used ingredients, and their properties. Students also learn skills such as cake decorating, pastry production, bread and dessert making, and other industry techniques. They also learn professional standards of personal hygiene, workstation sanitation, and general kitchen safety.
This course has been well segregated into two parts:
- Intensive Classroom Teaching and Practical Session – (6 months)
- Extensive On-ground Training in reputed Hotel/ Bakery for Industrial Exposure – (6 months)
